This is really a question for the non-developers. If you could code, what is it that you would want to make? Would it be something musical or something different entirely?
oh... I have a dream concept of live midi app, which would be the centre and heart of my hardware/software setup and obviously no only my. Recently even created a mockup, but well, I'm not a coder nor I have money to pay to someone who can code.
Soundforge/Recycle for the iPad. A sample chopping, drum loop slicing Beast that could export all the slices to the iTunes file sharing folder in .wav formats.
I'd code an app that would let you map notes in a grid format like Muzix Pro, but would be fully customisable by number of squares/rows in the grid and fully customisable what midi notes are placed inn what square. Combined with a simple graphic interface for pd or max msp
I fully agree with the Absynth mention. Absynth on an iPad would be fantastic!! Too bad my coding days are long over. :-( If not that then I would really like some sort of DAW that could process VST instruments.

A better Ableton Live/Acid Pro clone built for IDM producers. High quality timestreach, extremely high resolutions, tempo automation, seperate pitch+time controls, etc.

I'll implement a complete midi sequencer that can record all midi and sysex data (poly aftertouch etc.) into audiobus. Inclusive midi clock Sync and song position pointer etc.
Add preset saving function for audiobus projects with all open synth and fx.
And last but not least, add an on/off or bypass Button to all audiobus synth for saving processor and memory bandwith, so they don't have to be removed from the audiobus project. Maybe a freeze function for audiobus traffic.
a tracker like sunvox that is used by gamepad style controls, d-pad and buttons (even if they were on a touchscreen) just for the comfort of that way of holding the device. I used lgpt and lsdj for a while and the design of them is so nice to use but they are only for chiptune stlyle music. So something as powerful as sunvox, programming done with d-pad and buttons, record automation with joysticks acting as x-y pads because its more comfortable than pointing and dragging around the screen with your finger...but it could use that way as well, it could have both methods of input. maybe designed for something like the upcoming NVIDIA SHIELD or JXD android game devices, or PS-VITA.

I'd see if I could bring pdlib to the arduino or some other platform like it.
If I had time to code an iOS app, it would be a synth that catered to use with a wind controller rather than a keyboard controller.

Sonification apps skewed towards being useful for the recording musician.
For the effects slot in Audiobus, I would code something useful, akin to WarmVerb or Aether or Camelspace.
My 'magic wand' wish is that NI brings Absynth, Reaktor and/or Kontakt into the pad; mobile playspace.
On the legacy side, Metasynth would be an ideal (in my mind,) touch app, as would the iXI stuff.
