1. DAW - GarageBand / Nanostudio - nano is nice and responsive, but is still lacking backgrounding and basic linear audio tracks, oh and virtual midi out... GarageBand is a good basic all rounder of a DAW but is a bit overblown in places and feels a bit restricted at all times... Roll on Logic tablet edition... However both apps are used as the beating heart of my workflow so they have to be top of the list.
2. SYNTH - NLOG pro / Sunrizer - Both lovely synths. Both have excellent record functions for copy/paste and are only gonna get better when Audiobus gets released... Sebastian/Michael? Date? Can't wait for this it's gonna be sooooooo good.
3. ANIMOOG - would've been at two but MOOG have designed a bizarre record/overdub function without the ease of NLOG et al (where's record on first note?!)... Also I can't forgive MOOG for not giving FILTATRON audio copy/paste EVER. (Even Korg did that update...)
4. NODEBEAT - What an ingenious little app. All they need to do it allow user defined note info for the nodes and also some sort of sequencing function to change progression or tempo or rhythm etc.
5. SUNVOX - This is a fantastic all in one bit of kit, although the GUI is so basic to accommodate such a wide range of compatible devices that it is a bit of a pain to navigate. Would benefit from linear audio tracks and easier pattern editing
6. THUMBJAM - Love this app. Would be better if it was a bit less of an obtuse layout graphically (split into four?! Odd menu layout..) but the FUNCTIONALITY is incredible.
7. LOOPSEQUE - Fantastic drum machine/sampler but needs sample import from Pasteboard, and a basic pause start stop button!
8. SYMPHONIX EVOLUTION - Lovely composition tool, could do with virtual midi to trigger external apps, and could make it a lot easier to playback / record from particular bars
9. I REAL B - What an incredible tool for Jazz!! Could benefit from allowing a blank stave at the top of files to import top lines and lyrics (to circumvent copyright issues) but otherwise a lovely app with loads of great features
10. TWELVE TONE - When you do a lot of odd composition involving serial techniques etc like myself, this app proves a Godsend :) Just needs virtual midi out or maybe even to allow matrices larger than 12... Not that this is commercially of Concern to anyone but a geek like myself....
Thanks for those Neilos, I especially like seeing apps in people's top ten that I don't know so well or wouldn't have in my own.

Thank you for this annotated list, which goes beyond the usual suspects. But Moog's Filtatron _does_ have audiocopy and paste. Paste is accessible, as "Import," on the sampler page under "menu." If you select a sample, the "menu" will expand to include a "copy" option. Unfortunately, Filtatron does not accept one of the audio clipboard formats (I don't remember which one). But there are several apps (including NLog MIDI Synth and NLog Pro) that will convert clipboard formats back and forth.

THANKYOU!
I gave up on using it purely because there was no quick way to get my stuff out of it and into another app, I never thought to click that, I assumed it would have been in 'transfer files' on the other page.
Thanks for posting this list Ashley :)
