Run a 303 on one and put it through Amplitube on another, one of the many things you can do. I also have 2g iPod touch but will not sell it when I get the 4g or iPhone.
I have an extra iPhone 3G leftover from when I upgraded to the 3Gs. At first it was cool to just have all my music apps on it .... but then .... I got the iPad and now I never use my old iPhone 3G and only my 3Gs for apps that won't run on the iPad (which are rare). My iPhone is nothing more than a phone, camera, camcorder, recorder, GPS, email checker and web searcher when away from home. I did jailbreak my old iPhone 3G which was entertaining for a little while but the bottom line is that I should sell it.
Thanks for all the suggestions, I really appreciate it. I am going with the 'turn it into a music only device option', mainly because my 4 won't work with my Mikey or GuitarJack so I still need the device to use either of those, and also because it will be handy live as well.

Record from one into another? Just like bouncing between two cassette recorders- like we used to do in the old days!

Use it as a Dedicated SynthStation Brain.
NanoStudio running on one, improvising with Thumbjam on the other.
Just like all the others said: use it for mobile music making. What else should it be good for? ^.^

Will agree with Marlene. After I got my iPad, I haven't been doing much with my iPod touch.
Use it with GuitarJack and have the ultimate mobile recorder! :)
