I made my own by altering an av cable that had the TRRS 4 ring connector. It was very easy to do and works fine for my acoustic guitar (it has a built-in microphone and the usual mono guitar input). What's more I can use the same cable to connect to the line out of my keyboard so I can send in sounds directly to the ipod touch to record in 4 track or the like, or to alter using apps like irock, voiceband, stomp or Jasuto.
Any latency issues? It depends on the app. There's certainly latency issues with Jasuto Pro, OttO, SFSsynth but not with most of the guitar FX type apps like RiotFX, PRS Amp, StompVox, Guitarfx deluxe, irock, effectorlite or with the main recording apps. I've mainly been using it for guitar sounds and only recently tried it with the headphone line from by keyboard. It works fine for that too, giving me lots more options to sample sounds from my keyboard and use them in compositions on the ipod touch or to use the keyboard as a playable input for certain apps (like voiceband). I've been doing some experiments with creating a simple circuit to control the impedance of the signal so as to not overload the ipod (a high signal doesnt seem to damage the ipod touch but it can result in distortion or clipping). I found that a modification of the following circuit (swapping the 10K resistor for a potentiometer and putting a 10 ohm resister in line with the input ground) seems to give me the best result, allowing me to vary the keyboard volume and the circuit pot resistance to give the best input level. http://www.tkk.fi/Misc/Electronics/circuits/speaker_to_line.html
