PianoStudio is a great app if you want a piano sound as I often do. I like this app because from a composition point of view I find it really useful for just messing about with things.
Sometimes all I want is to be able to set up chord progressions and hear them playing over and over. PianoStudio also has some nice sharing features via twitter too.

The Prochords app that was finally released last week is also pretty good for playing around with chord progressions. They need to put a little extra sustain on the sounds and perhaps a recording option and it would be perfect.
