This reminds me a bit of AxisPad by miniMusic on the Palm side. I haven't tried it out as yet because it says it is for iPhone and doesn't mention the Touch at all so I'll check before I give it a try out.

I bought Thereminator and was disappointed with the sound quality. It clicks whenever you end a "note" or "gesture". There are many clicks during playback as well. Good to see apps like this out there though.
Try the 1.1 version, it has improved a great deal,
