This is an interesting new app that captures notes from an acoustic instrument and records them as MIDI. The current version is monophonic, but promises that future updates that use the 3GS hardware could do a lot more.
This seems very similar to iComposer to me, but as I haven't actually used either I can't be sure. I think I'm off to buy both now!
