So, how many? Do you keep them around even if you're not really using them anymore? Do you regularly spring clean out your iDevice, and how much space is currently being taken up by apps that you don't really use anymore but you can't bring yourself to delete? Or is that just me?

Too many. There's only a few that I keep going back to: Garageband, Cubasis, Thor, Alchemy, iSEM, Korg Module, Animoog. All the rest not so much (and it's a pretty big list).
